Ingrédients pour 3 personnes :
300 gr de viande d'agneau de préférence j'ai pris du veau
500 gr d'haricots verts fins et fermes
3 a 4 belles tomates
2 gousses d'ail
1 c s de concentre de tomates
1 cube de bouillon d'agneau du type Maggi
Sel, poivre
2 c à s de ras el hanout
Préparation :
Pelez l'oignon, l'ail et émincez finement l'oignon et écrasez les gousses d'ail.
Dans une marmite mettez une cuillère à soupe d'huile, faites revenir l'oignon et l'ail.
Ajoutez les morceaux de viande et les tomates pelées, épépinées et coupées en très petits morceaux.
Couvrez et laissez mijoter sur feu moyen 15 minutes environ.
Équeutez les haricots verts, coupez-les en tronçons de 3 cm, lavez-les et égouttez.
Ajoutez-les dans la marmite avec le cube de bouillon, et couvrez de 200 à 250 ml d'eau chaude (à peu près juste de quoi couvrir un peu le tout, ne surtout pas mettre beaucoup d'eau) , salez, poivrez et mettez le ras el hanout.
Laisser cuire 15 à 20 minutes sur feu doux, ajoutez le concentre de tomates et laissez cuire encore 10 minutes , jusqu'à ce que la sauce soit réduite et les haricots bien cuits.
Servir bien chaud.
