Voici une nouvelle recette avec mon siphon, il commençait à prendre la poussière et je me demande bien pourquoi car les mousses sont vraiment une réussite !!
Ingrédients pour 6 personnes :
1 botte d'asperge vertes (250 g)
1 oignon
25 cl de crème fleurette
1 jaune d'oeuf
1 c à c de moutarde
1 c à s d'huile d'olive
Sel et poivre
4 oeufs
2 c à s de mayonnaise
1 asperge verte crue
Préparation :
Éplucher l'oignon et le hacher.
Faire bouillir une casserole d'eau salée, y plonger les asperges et l'oignon, laisser cuire pendant 15 min.
Rafraîchir sous l'eau froide les asperges et l'oignon.
Mixer avec la moutarde, le jaune d'oeuf et l'huile, mélanger avec la crème fleurette, passer au chinois et assaisonner.
Verser dans le siphon et ajouter 1 cartouche de gaz.
Secouer et garder au frais 3h au minimum.
Cuire les oeufs, séparer le blanc des jaunes, les hacher grossièrement, mélanger le jaune et la mayonnaise.
Couper des petits copeaux d'asperge crue.
Dans les verrines dresser par couche : blanc d'oeuf, mousse d'asperge, jaune d'oeuf-mayonnaise, mousse d'asperge, terminer par des copeaux d'asperge crue et du blanc d'oeuf.
